TOAST OF CHAMPIONS

Whoever said breakfast can’t taste spectacular while firing you up with good nutrients and energy … never met the following recipe created especially for Diary by the amazing Vanessa Mahon of famed SUGAR SKIRT. Easy to make and so freakin delish and solid for you. Photography VANESSA MAHON

 

 

INGREDIENTS

Strive for as much organic produce and ingredients as possible …

  • 1 Slice of Toast (preferably whole grain and gluten-free)
  • 2 Slices of Tomato
  • 1 Egg, sunny side up (preferably organic and free-range)
  •  1 Slice Green Pepper
  • Salt and Pepper to taste

 

 

HOW-TO

Ready in ​10 minutes, Serves 1 person.

  1. Toast bread. ​During that time, slice green pepper and tomato.
  2. In a skillet, spray cooking spray of choice onto skillet (preferably organic) and crack egg directly onto it. Cook 3 minutes. Flip egg carefully and cook another 1- 2 minutes. Season with salt and pepper.
  3. Assemble toast. Enjoy!
